Since May 2025 a fresh culinary wind blows through the oldest part of Castle Elsloo: Bar Bistro Dorine. A place where you immediately feel welcome, but where everything is right. Accessible, but on level.

Ralph - Chef

No stranger to the castle. Having gained valuable experience, he is now back on the old nest. As head chef, he brings his creativity and craftsmanship together in a contemporary cuisine, while respecting the classic flavors appropriate to the castle's history.

Ronnie - Maitre

With his inexhaustible passion for wine and hospitality, Ronnie makes every guest feel seen and welcome. After 17 years as host of Castle Elsloo, he fanned out, but for this special reopening he is happy to return to his old nest.
